An overnight in Cañon City exposes us to a unique hotel room, sparkling speakeasy, attempted fine dining, lavish pastries, quality coffee and vino along the way
We've had some comical experiences at 1887. Wait staff hiding under the pool table at their NYE party, one bartender working the bar for extended periods of time on NYE, served mashed potatoes with zero seasoning, horrible smoked fish, tough and chewy pork belly, a bartender didn't know how to make the drink I ordered so as she said, she just poured a bunch of bourbon in it. I'm sure I can think of other examples. We do like the atmosphere though and use it as a pre or post dinner drinks place. Breakfast can be good if you can get service. We only go there for breakfast if we're tired of our regular places and too lazy to drive to Pueblo or Springs. Fremont Provisions (same owner) has very similar issues. Inconsistent food and service.
You captured the 1887 experience so well. I’ve eaten there 4 or 5 times for breakfast and dinner. The food has been bad every time, and the service has also lacked. For what they’re charging, I expected an upscale experience and they just don’t deliver. I don’t plan to go back, and I wonder how they will stay in business without repeat customers.
Wow, you have given them quite a few chances to prove themselves. I hope they make some changes soon for the better because it’s a a pretty space with lots of potential.
Next time you come down, skip Whitewater and try Hardings on Main! They are the only ones actually giving us fine dining.

Thanks for the insight!
